Creamy No-Oil Sunflower Seed Dressing

Makes about 1.25 cups

This lovely, creamy dressing goes with salads of all kinds. It’s an easy, one-step recipe—just blend everything together. If you don’t like the sunflower seed taste, you could substitute tahini. You could also experiment with your favorite vinegar instead of the lemon juice and/or add additional spices or herbs.

Put all the ingredients into a blender and blend them together until smooth. It is ready to use or will last a couple of weeks in the refrigerator. 

  • 1/2 cup water 

  • 1/4 cup sunflower seed butter or roasted sunflower seeds (salted okay)

  • 1/4 cup silken tofu

  • 2-3 Tablespoons lemon juice (what you get from 1 lemon)

  • 1 clove garlic, roughly chopped or sliced (or 1/4 teaspoon garlic powder)

  • 1/4 teaspoon salt

  • 1/8 teaspoon red pepper flakes
