Jicama and Avocado Salad with Citrus Dressing

At 50 calories a cup with a sweet flavor and crisp texture, jicama is a wonderful food that originated in Mexico (jicama is actually the root of the yam bean plant). It’s a great source of fiber and Vitamin C. In this salad it’s combined with cabbage, avocados, onion, and cilantro, brought together by a fresh citrusy dressing made with orange and lime juices. Without oil or added sugar, this salad is also ridiculously healthy!

Makes about 5 cups of salad (4-5 servings)

Make the dressing by whisking the following ingredients together.

  • 1/4 cup orange juice

  • 3 Tablespoons lime juice

  • 2 Tablespoons tahini

  • 1 teaspoon maple syrup

  • 1/4 teaspoon ground coriander

  • 1/4 teaspoon ground cumin

  • 1/4 teaspoon salt

Toss together the following ingredients in your serving bowl.

  • About half a medium jicama, peeled and julienned (thin matchsticks) or spiralized and cut into 3” lengths (about 2 cups)

  • 2 cups thinly shredded cabbage (I prefer purple for color)

  • 1-2 medium avocados, cubed or sliced

  • 1/4 cup thinly sliced red onion

  • 1/4 cup chopped fresh cilantro

  • Optional: segments from an orange or part of an orange
